I was introduced to this smoothie when I was pregnant. It was said to have saffron is good for pregnant mother and the baby. So trying the recipes with saffron was my mission and I landed to this amazing blend of taste and health.
It is best made with the seasonal carrots which are bright red in colour rather than the orange ones which we get throughout the year. Now the long, red, sweet carrots have entered the markets so forces me to have this winter delicacy again.
2 diced Carrots (Preferably Red carrots which are available in winter only and are sweet in taste)
1 cup milk
4-5 tea spoons sugar
9-10 strands of saffron
Almond – Pista ( finely chopped) for garnishing
Mix all the above mentioned ingredients in milk.
Boil milk with carrot, sugar, saffron till the carrots become soft.
Allow this to cool down and blend the mixture in a blender / juicer.
Pour in tall glasses.
Refrigerate for an hour or two. (Or you can refrigerate the mixture for an hour and blend it later)
Garnish with chopped almond, pistas, few saffron strands and serve chilled.
This healthy smoothie is a must have for winter. And it will be loved by all for sure, including the kids.
For a twist you can serve it with vanilla ice-cream scoops.
